Green Tea Mochi Ice Cream

I’ve tasted mochi many times in restaurants and have always found its distinct flavor and texture to be fascinating, but I had no idea how it was made. In all honesty, I still don’t, but this was my first try, so I welcome any feedback.

Ingredients:

Green Tea Mochi Ice Cream:

  • Ten little portions of vanilla ice cream
  • 1/4 cup of sweet rice flour
  • Half a cup of cold water
  • One pinch of salt
  • Two teaspoons of white sugar
  • One-tsp matcha green tea powder
  • One tablespoon of cornflour, or more if necessary

Green Tea Mochi Ice Cream

  • Take off and dispose of the upper portion of a cardboard egg carton. Ten of the cups should be lined with plastic wrap in the lower half of the egg carton.
  • Fill ten prepared egg carton cups with ice cream. Spoons should be frozen for at least two hours, or until very solid, and covered with plastic wrap.
  • In a bowl safe for the microwave, whisk together rice flour, water, and salt. Add sugar and stir until smooth. Stir the powdered green tea into the rice flour mixture.
  • Place plastic wrap over the bowl containing the rice flour mixture and microwave for 2 minutes. Stir the rice flour mixture, replace the plastic wrap on the bowl, and microwave for an additional one and a half minutes, or until the mochi dough is thick and sticky.
  • Dust a work surface with corn flour very lightly. Place the mochi dough on the ready surface. Roll out the dough to a rectangle that is 1/8-inch thick, then cut it into ten equal squares.
  • Pop the ice cream balls out of the plastic wrapper. Put one ball of ice cream in the middle of each piece of mochi dough. Pinch the bottom edges of the mochi dough together, trim off any extra dough, and then gather the dough till it completely encases the ice cream ball. Continue with the remaining dough squares and ice cream.
  • Place each mochi ball, seam side down, in an egg carton after securely wrapping it in plastic wrap.
