Ingredients

  • Three substantial egg yolks
  • One and a half cups of heavy cream, split
  • half a cup of sugar
  • two cups of raspberries
  • two tsp. sugar
  • two dabs of essence from vanilla
  • One pinch of salt

Directions:

Step1:

In a heavy-bottomed pot, simmer 3/4 cup cream and 1/2 cup sugar over medium heat until the sugar dissolves and the cream becomes heated. 

To temper the egg yolks, whisk a small amount of the heated cream into them. Next, whisk the warm yolk mixture into the heated cream while stirring continuously until the mixture thickens to the point where it coats the spoon’s back.

Keep the mixture from boiling. Take off the heat and swiftly pour into a bowl using a sieve.

Step2:

After whisking in the remaining 3/4 cup of cream, cover the mixture and refrigerate.

Step3:

Raspberries should be pureed in a food processor and then filtered through a fine-mesh sieve to get rid of the seeds. After the sugar has dissolved, stir in two tablespoons of sugar.

To the cool cream mixture, add the pureed raspberries. Mix in the salt and vanilla extract. Allow the mixture to cool in the refrigerator for approximately half an hour.

Step4:

Transfer the mixture to an ice cream machine and freeze for about 20 minutes, or as directed by the manufacturer. After transferring to an airtight container, freeze for four hours or until hard.
