How To Make 2-Ingredient Rolled Ice Cream At Home

Ingredients

  • One pint of thick cream
  • One 14-oz can of condensed milk with added sugar
  • A dash of salt
  • Optional add-ins include chopped almonds, Oreos, chocolate powder, strawberry jam, caramel, sprinkles, and cookie dough.
  • Topping options include chocolate chips, pretzels, fresh fruit, sprinkles, cake pieces, and gummy bears or mochi.

Step:1

In a bowl, whisk together heavy cream, sweetened condensed milk, and salt.

Step:2

Transfer the ice cream mixture onto a baking sheet with a rim or a metal sheet pan. Aim for a thickness of no more than ¼ inch; 1/8 inch is optimal. It should just come up to the pan’s bottom.

Step:3

If you want to incorporate a mix-in, sprinkle it on the sheet pan and delicately spread it throughout the ice cream base with a silicone spatula.

Step:4

For at least four hours, place the sheet pan in the freezer to ensure it is frozen.

Step:5

Take the sheet pan out of the freezer once the ice cream has solidified. Place the longer side of the sheet pan facing you. With a paint scraper or a flat, sharp-edged metal spatula, carefully cut the ice cream into 3-inch-wide strips.

Next, work swiftly from top to bottom, scraping up each strip with your spatula and carefully pressing it into a tight tube at a 45° angle. You can mold the sheet into a rolled shape with a butter knife if you need assistance getting the roll to form at the base of the pan. 

Once the roll is completed, use tongs to move it to your serving dish (ramekins or cold bowls with straight sides work best). Proceed with the leftover ice cream on the baking sheet.

To help prevent your ice cream from melting while you roll, it’s advisable to freeze your rollers and ice cream bowl at least an hour beforehand.
