I therefore seize the opportunity to experiment with cookie-flavored ice cream whenever I get the chance. And I’m so happy with how this recipe for Biscoff ice cream turned out, let me tell you.

This ice cream has the most amazing texture. The ice cream is beautifully creamy and the cookies are just the right amount of crispy. Take a big spoon and dig in; this delight is truly unique.

Just be advised that this ice cream is really rich. I estimate that a batch of handmade ice cream yields five to six servings. We do, however, usually have this dish in smaller amounts.

If I didn’t provide my personal suggestions for topping a bowl of Biscoff Cookie Butter Ice Cream, I would be remiss. Because a bowl of ice cream that is laden with toppings is the only thing better than a bowl of ice cream itself.

Cookie Butter Ice Cream

Biscoff Cookie Butter Ice Cream

Ingredients:

  • light brown sugar in cookie butter
  • whole milk
  • heavy cream 
  • kosher salt, 
  • vanilla extract
  • Cookies like Biscoff or Speculoos 

In a large bowl, start by combining together the brown sugar, salt, and melted cookie butter. After that, mix to a smooth consistency while stirring in the cream. Whisk once more after adding the milk and vanilla slowly.

As directed by the manufacturer, pour into the ice cream maker and churn. Melt ⅓ cup cookie butter in the microwave for approximately one minute while the ice cream is churning. Stir until liquid and smooth. Put aside.

Once the churning process is complete, move approximately one-third of the ice cream into a freezer-safe, airtight container and pour in approximately one-third of the cookie butter mixture. Next, liberally scatter cookie pieces on top.

Repeat these layers twice more, swishing only a few times to include them with a knife. After that, put a lid on it and freeze it until it becomes firm enough to scoop out. Transfer into bowls and garnish with additional cookies, if preferred.

  • One cup milk 
  • One teaspoon extract of vanilla

  • 10 Speculoos or Biscoff cookies
  • split into ½-inch pieces
  • approximately ¾ cup of melted cookie butter

Instructions

  • In a mixing dish, stir together the brown sugar, salt, and melted cookie butter. Add the cream, and whisk until smooth. Whisk in the vanilla and milk gradually until smooth. As directed by the manufacturer, pour into the ice cream maker and freeze.
  • Melt ⅓ cup of cookie butter in the microwave for approximately one minute while the ice cream is churning. Stir until liquid and smooth. Put aside.
  • Once the churning process is complete, move approximately one-third of the ice cream into a sealed container and pour in approximately one-third of the cookie butter. Add a generous amount of cookie pieces. Once again, repeat the layers, swishing the mixture a few times with a knife to ensure even distribution.
  • Put a lid on it and put it in the freezer to solidify until you can scoop it out. Transfer into bowls and garnish with additional cookies, if preferred.
